225|58 ALl Ultem Gyuto

This year I have already made a few blades in this style. The most notable feature is probably the hollow forged sides of the blade which, in combination with an overall thinly, precision forged geometry and a rapidly tapering spine create great cutting abilities and an agile handling with a low overall weight.

The spine thickness is reduced from 4.2 mm at the handle to just 1.6 mm already halfway through its length and tapers further towards the tip. Overall, it's a light, fine blade that is still durable enough for various tasks.

The blade bevels are ground convex to a fine edge which easily bends over a fingernail on the entire length. With a Walkschliff-Geometry at the tip area.

The handle features my usual take down construction, this time using only parts made of Ultem (PEI) for the outer construction. Also introducing a new handle element which, thanks to the modular design, can be quickly fitted to the front of the handle as required - A widened front piece, providing extra volume for more comfort in the pinch grip position, adding more material for better support in the palm.
